Some weapons and other items can be thrown. To throw an item,
practice the throw skill at a thieves' guild; then take the
item in your inventory and type 'throw <direction>' or 'throw
<target>'.

If you suspect that something is about to be thrown at you,
you can attempt to catch it. Just type 'catch <item>'. The
catch skill is innate, you don't need to practice at a guild.
